* 1/2 c. orange juice, unsweetened
* 1 Tbsp. grated orange peel
* 2 Tbsp. canola oil
* 2 large eggs
* 1 c. mashed ripe bananas (about 2 medium)
* 1/4 c. honey
* 1/4 c. firmly packed brown sugar
* 2 c. quick cooking oats
* 1 c. whole wheat flour
* 2 tsp. baking powder
* 1/2 tsp. salt
* 1/2 c. chopped walnuts (optional)
1. Preheat oven to 400°F.
2. Combine first 6 ingredients in a large mixing bowl. Stir well. In a medium bowl, combine brown sugar, oats, flour, baking powder, salt and nuts (optional). Combine with liquid ingredients and mix slightly until dry ingredients are moistened.
3. Spray muffin cups with nonstick spray and fill 3/4 full. Bake for 20 minutes or until golden brown.
