Pumpkin Streusel Muffins

| STREUSEL TOPPING |
| 2 Tbsp. light brown sugar |
| 2 Tbsp. granulated sugar |
| 1/2 tsp. ground cinnamon |
| 1/2 c. all-purpose flour |
| 3 Tbsp. butter, melted |

| MUFFINS |
| 1 stick butter, softened |
| 1 c. granulated sugar |
| 1 c. pumpkin puree |
| 2 eggs |
| 1 tsp. vanilla extract |
| 2 c. all-purpose flour |
| 1 tsp. baking soda |
| 1/2 tsp. baking powder |
| 1/4 tsp. salt |
| 1 1/2 tsp. pumpkin pie spice |
Directions:
1. Preheat oven to 350°F. Place paper liners in 12 muffin cups.
2. In a medium bowl, combine Streusel Topping ingredients. Stir until mixture is crumbly; set aside.
3. In a large bowl, beat butter and sugar until creamy. Mix in pumpkin, eggs, and vanilla until smooth. Add flour, baking soda, baking powder, pumpkin pie spice, and salt; mix until well combined. Spoon batter evenly into muffin cups; sprinkle with Streusel Topping.
4. Bake 22 to 25 minutes, or until a toothpick comes out clean. Remove from muffin tin and let cool in a wire rack.
