Alaska Scallops Wrapped in Prosciutto

20 proscuitto slices |
1/2 c. prepared pesto |
20 Alaska scallops, thawed if necessary |
Directions:
1. Preheat grill to medium-high heat. Brush clean barbecue grill with oil.
2. Place Alaska scallops on grill and cook for 4 minutes. Remove to a baking sheet; cool slightly.
3. Lay proscuitto slices out on a flat surface and fold length-wise into 1-in. wide strips. One inch from the bottom of each piece, place 1 tsp. pesto. Place a scallop over the pesto, and roll it up in the proscuitto. Grill an additional 1 to 2 min.
