Creamy Tomato-Vodka Soup

1 jar (24 oz.) Classico® Four Cheese Pasta Sauce |
1 Tbsp. extra virgin olive oil |
2 onions, sliced |
2-3 small cloves garlic, smashed and peeled |
1 jar (32 oz.) (4 c.) vegetable broth |
1 jar (28 oz.) Italian plum tomatoes, with juice |
1/4 c. vodka |
6 sprigs flat-leaf parsley |
1 tsp. salt |
1 tsp. sugar |
2 c. half & half |
Directions:
1. In a large pot, heat oil over medium-high heat. Add onions and garlic and cook 1-2 min. Add remaining ingredients except for the half-and-half. Cover and simmer for 30-60 min. stirring occasionally.
2. Using an immersion blender or a food processor, puree the soup in batches (be careful-the liquid is hot). Stir in the half-and-half. Cook in the covered pot on low heat until heated through, 20 to 30 min.
